For the Merlot Avignonesi: La Selva Estate, located between the towns of Valiano and Cortona, within the Cortona DOC appellation; for the Sangiovese: Capannelle Estate, located in Gaiole in Chianti, between Siena and Florence

Temperature controlled fermentation and maceration on the skins protracting for 20-25 days in vertical oak casks.
Our Merlot is aged for 12 months in new French oak barrels and then blended with Capannelle’s Sangiovese.
The wine then spends another 24 months in new oak.
