"Pretty closed up right now, this is full of latent energy. It´s extremely powerful and precise, with poise and tension but also with generosity and density, yet it errs on the side of not giving much away rather than giving too much. You have to give it time in the glass for those cool blueberry, bilberry and tightly spiced notes to come to the fore. The stunning texture is clear but the aromatics take their time. Das Chateau Canon
Die Weinberge von Chateau Canon liegen auf dem Plateau von Saint Emilion mit Ton und tiefem Kalkstein. Die exponierte Süd-/Südwestlage beschert den Trauben eine deutlich höhere Anzahl der Sonnenstunden und eine dadurch resultierende bessere Reife der Trauben.
Im Durchschnitt sind die Reben von Chateau Canon 25 Jahre alt. Eine selektive Grüne Ernte sorgt dafür, dass überschüssige Trauben entfernt werden und die übrigen Trauben besser reifen können. Die Erntemengen fallen im Chateau Canon je nach Jahrgang extrem unterschiedlich aus. Nach der Ernte findet erneut eine extreme Selektierung des Traubenmaterials statt. 18 bis 20 Monate reift der Wein langsam in Eichenholzfässern, bevor der Wein unfiltriert abgefüllt wird. 70 % der Holzfässer sind jedes Jahr neu. Das Ergebnis sind wunderbar kraftvolle Weine mit einer schier unendlichen Komplexität und Tiefe.
