"Bright, full ruby-red. Dark, reticent scents of blackberry, cassis, licorice, mocha, toffee and minerals. Broad, dense, dark and savory on entry, then thick and vibrant in the middle palate, and still quite youthful in spite of its breadth and richness. Shows little easy sweetness but really spreads out to saturate the palate without leaving any impression of dryness. There's something Old World about this. The highly concentrated, slightly medicinal dark berry and cocoa powder flavors may yet gain in sweetness as the wine unwinds. Finishes with firm, broad, dusty tannins and sneaky persistence and breadth, with slowly emerging sweetness. I reported in 2004 that this savory wine was bottled with a very high pH of 4.01, but it hardly lacks for energy or structure. In fact, this youthfully dense, rather powerful Bordeaux blend is just approaching what is likely to be an extended period of peak drinkability." - Vinous

Das Dominus Estate
Dominus Estate ist ein Weinproduzent, der im Norden von Yountville in der kalifornischen Weinregion Napa Valley ansässig ist. Das Weingut stellt einen der so genannten Kult-Cabernets von Napa her, und der gleichnamige Wein wird regelmäßig von der Kritik gelobt. Der Eigentümer Christian Moueix ist - zumindest teilweise - seit 1982 im Besitz des Weinguts und leitete es bis 2008 parallel zu seinem Familienbetrieb in Bordeaux.
Das Weingut ist um den Weinberg Napanook herum angelegt, der als einer der ersten Weinberge im Napa Valley bekannt ist. George Yount, nach dem die Bezeichnung Yountville benannt ist, legte hier 1838 einen Weinberg an, und seither war die 50 Hektar große Fläche im Besitz aller möglichen Napa-Größen, darunter auch John Daniel Jr, dem es zu verdanken ist, dass das Weingut Inglenook zu Weltruhm gelangte.
Moueix ging 1982 eine Partnerschaft mit Robin Lail und Marcia Smith, den Töchtern von John Daniel Jr., ein und übernahm 1995 die alleinige Eigentümerschaft. Seitdem ist ein zweiter Weinberg zum Dominus-Portfolio hinzugekommen, diesmal in Oakville.
Der Weinberg Napanook liegt am Rande der Mayacamas Mountains und erhebt sich leicht in die Hügel im Westen des Tals. Der Weinberg wird von Cabernet Sauvignon dominiert, obwohl es auch Anpflanzungen von Cabernet Franc und Petit Verdot gibt.
Diese Zusammensetzung spiegelt sich im Flaggschiff-Rotwein von Dominus Estate wider, der überwiegend aus Cabernet Sauvignon mit etwas Petit Verdot und Cabernet Franc besteht - wobei die genauen Anteile vom jeweiligen Jahrgang abhängen. Dominus Estate stellt auch einen Rotwein der Einstiegsklasse, Othello, und einen Cabernet der mittleren Kategorie, Napanook, her.
Der Weinberg wird trocken bewirtschaftet, um Wasser zu sparen und die Erträge und damit die Qualität der Früchte zu kontrollieren. Moueix ist auch ein besonderer Verfechter der Ausdünnung, die er seit den frühen 1970er Jahren auf seinem bekanntesten Weingut einsetzt: Pétrus. Man sagt, dass diese Praxis die Qualität der Früchte verbessert, da sie das Verhältnis von Blättern zu Früchten verbessert und die Reifung fördert.
