Made up of 72% Cabernet Sauvignon, 18% Cabernet Franc and 10% Merlot, the 2016 Trinite Estate Acaibo has a medium to deep ruby-purple color and violet, chocolate box, warm black cherries, cedar and warm blackcurrants on the nose with nuances of beef drippings, cast-iron pan, exotic spices and a classy frame of new oak spice—this is perfumed and minerally without lacking any fruit. The nose is fruity, structuring and powerful. It reveals notes of blackberry, cherry and small notes of small berries associated with fine touches of raspberry as well as fine hints of violet, pepper and a discreet sappy hint. The palate is fruity, elegant and offers a good definition, gourmandize as well as an acidulous frame. On the palate this wine expresses notes of red cherry, juicy/fleshy raspberry and small notes of small red berries, blueberry associated with fine touches of violet as well as a very discreet hint of liquorice, chocolate and vanilla. It has been slightly over a year since I tasted this last. Over the past 12 months, the wine has filled out and softened a bit, now, the medium-bodied wine shows a nice floral character with notes of vanilla bean, espresso. spice box, black and red fruits, and a touch of spice on the nose and on the palate. The red berry finish comes with a touch of dust in the tannins. The wine is a blend of 72% Cabernet Sauvignon, 18% Cabernet Franc and 10% Merlot. Jeff Leve
