Das Chateau
Château Canon ist ein Premier Grand Cru Classé Château in Saint-Émilion, Bordeaux. Es besitzt einige Weinberge in der Nähe der Stadt Saint-Émilion, mit einer großen Kernparzelle ganz am Rande.
Diese Parzelle ist fast vollständig eingemauert und wird traditionell von Hand geerntet und von Pferden gepflügt. Sie ist vollständig mit Merlot bepflanzt. Dieser wird regelmäßig für den Grand Vin von Château Canon verwendet, zusammen mit einem kleineren Anteil Cabernet Franc aus den verschiedenen anderen Weinbergen des Gutes.
Mehr als 60 Prozent der Weinberge von Canon sind mit Merlot bepflanzt. Der Rest ist Cabernet Franc, obwohl ein kleiner Teil des Cabernet Sauvignon die Ausmerzung in den späten 90er Jahren überlebt hat.
Die Trauben werden sorgfältig gemischt, um das Beste aus jeder Traube herauszuholen: Der Merlot bringt Geschmeidigkeit, Finesse und intensive Fruchtaromen mit sich, während der Cabernet Franc für Struktur und zusätzliche Alterungsfähigkeit sorgt.
Das Château stellt auch den Wein Croix Canon aus einem 11 Hektar großen Weinberg her, der an das Canon-Anwesen angrenzt.
Käufer sollten sich der großen Anzahl von Weinen aus dem rechten Ufer bewusst sein, deren Namen das Wort "Canon" enthalten. Dazu gehören zwei verschiedene Weine mit dem Namen Château Canon aus Canon-Fronsac, von denen einer ein sehr ähnliches Etikett wie dieser berühmtere Wein hat.
